Who doesn't love chocolate mousse? Here is a simple one that's dairy-free, sent to us by the people of Chocolate Maya.
Ingredients:
6 egg whites
7 oz (200 g) dark chocolate (60% to 70% cacao depending on your taste)
1 oz (30 g) sugar
Directions:
Beat the egg whites and sugar to form a solid peak.
Melt the chocolate using a bain marie (double boiler).
Incorporate the melted chocolate into the egg white using a wooden spoon, mixing gently but firmly.
Transfer the mix into a bowl, cover the bowl, place in the fridge for a good 6 hours.
Delicious chocolate mousse, very light and fluffy. The secret is... use a very high quality chocolate.
